*Note on Fresh Cream Wedding Cakes:
Because fresh cream fillings cannot be used with fondant icing (a. the combination does not taste well together and b. fondant icing cannot be refrigerated whereas fresh cream has to be refrigerated), we offer a compromise to brides and grooms who wish to have a traditional iced wedding cake, but also want a fresh cream gateau-style wedding cake:
The fresh cream cake tiers are left into the kitchen at the wedding venue for serving to your wedding guests, and iced "display" tiers are placed on the cake stand. Of course, the bottom tier which is cut during the cake cutting ceremony can be a real cake, for example, a Cognac fruitcake or any of the other non-fresh cream cake choices above. The "display" tiers look the exact same as real cake tiers and your cake design is exactly as you wish.
